off-the-clock training, is this illegal?

I work for a coffee shop, and part of the training is learning the recipes. My manager says i should be studying the recipes in my free time so that within 2 weeks of starting she can “quiz me” to see if I'm ready to work the drink bars. I do not like that they expect me to work off the clock. I point blank asked her if she is expecting me to work off the clock and she snapped back “study?? Uh yeah.” Like it is totally normal. I'm new to food service, but I've worked a lot of retail, and I know job training has to be compensated. I'm wondering if this is different? I don't think she is technically requiring it, which must be the loophole they are working through. But if she is going to test me on the information, and it's information that is required…

I'm sure if I confront her on it again it won't go well for me, but do you think i should stick up for my rights? Everyone else seems to have kissed her ass but that's not my vibe.

Or maybe I'm totally off-base.
Id appreciate any insights or advice

Edit: seems like this type of training has been normalized, whether it should be or not. Some people are comparing this to school, but I want money- not a career. Already looking elsewhere for a different job
