Question on here; The place I work at, is trying to make employees sign a paper regarding new “policies”.

I work at a gym, and recently there was this meeting being held by our manager where she told us we have to sign this paper in regards to policies being enforced. Some of the policies in the paper said “no negative talk” and that we must always carry walkies even on our breaks even for people who aren’t in positions to carry them. Other policies, on there that we must interact with members at our gym, as in go out of our way while in the middle of carrying out tedious tasks. Others were standard like being in uniform, and no ear buds. But the one I’m worried about are the policing my speech. Can they force us to sign something like that?
