Really bizarre tip pool situation

In May I started working at this cafe/lounge/venue/patio. During my interview the person hiring told me that all of the tips from the cafe, lounge and patio were pooled for the week and divided by hours worked, immediately I thought that was weird but I was desperate for a job. At first I’m only bartending in the venue and that’s great, the tips are split amongst the other bartenders and we walk with our cash. Fast forward a month and I am asked to start working the patio, that’s when I realize how absolutely f*cked the tip pool is. At the end of the shift, you walk with no cash, you put it in envelope along with your drop and that supposedly goes into the pool. So I get my paycheck and after brining close to $300 for two shifts I see $74 in tip on my paycheck… and that’s…

Apparently, support staff like bussers and runners make the same in tips as a bartender or server. There is no breakdown of the tips and no transparency. To make matters even more strange, my work is owned by a major corporation under an umbrella company and two months into me working there, they popped out with NDA that we all had to sign to continue working there.
This is all to say that this is my own experience/perspective and something seems very off to me.
What would you do (aside from quitting, obviously)?
