Starting side hustle while employed – will I get caught?

Location: EU I work for a company, let's say as a software developer, since 2 years – I have signed an exclusivity clause and a non-compete agreement. I have been given the opportunity to start a company with a relative of mine which resides in a different country. The work I would carry out would not take place during normal working hours where I am working for my employer. This company abroad will carry out similar services which means I would break my non-compete agreement with my employer. I wouldn't be the “face” of the company anywhere, but my name would obviously be in the company registrar in the country where the company is registered.
