strike reform

Genuine question here. While I love all the strikes going on right now, eat the rich. Why aren't we doing mass quitting instead? A company can't operate without employees, and if they are creating an environment where striking is necessary, do we really want to continue to allow that company to exist? Am I missing something here or just overthinking things? There's trades that have unions that find work for them. If a company upsets the union, they send their guys elsewhere. I guess my actual question is why are we building unions that are tied to companies instead of unions tied to jobs? Like the millwright union or pipe fitters union?
