Why are some coworkers so against utilizing time that is owed to them such as breaks or PTO?

So like I'm not talking bosses or people with stakes in the company, and I can understand medical ER to a degree. I'm talking about fellow coworkers, I've worked with guys who would refuse to take breaks and work through them and had the attitude of “we don't take breaks around here” mentality even though they're specifically entitled to it where I live, same thing with PTO. I worked with one guy who wracked up so much PTO that he refused to use it and ended up losing a lot of it transitioning into the next year and the bosses would force him to take paid vacation for two weeks or so. If you're one of those people, just why?
