Would finding a new job be best?

In Canada Btw. I have 0 debts, 0 payments besides rent and groceries, basic essentials, etc. I've been at my current job for 6 months now, little bit of backstory. I've been in the dealership world since I was 18, I'm 21 now, currently working in parts, for the first 4 months was absolutely fine. We had an employee leave for another job elsewhere right at about 4.5 months in for me, leaving us understaffed, and me still being relatively new. Have spoken to management regarding if we were hiring another person to fill the void was told no for “cost effective” reasons. I work alone on Mondays now, dealing with walk-up customers, phones, online orders, and all paperwork regarding orders and the likes. By the end of the day I'm fully burnt out as I basically have no stopping in the day besides lunch. And even multiple times have been reached out on my days off to come in despite talking to “HR” about my situation.

I'm paid well and above average for my experience and age. However pay only goes so far for me when I'm mentally drained the rest of the week as it's just as busy even with one other person, and on weekends I'm a zombie, not wanting to do anything or I watch friends be able to go out, or go on short trips and I'm working and can't go with them, which sucks for me as we are all young and I feel like I'm missing out on my 20s

I have enough money in my savings and bank in general to straight up quit and live for at least 5 months with no job, I've even looked into making a small business so I'm working hard but at least it's for myself and not some Corp.

Maybe I'm overreacting, but whether we make $5000 in parts in a day or $50 I still get paid the same, yet had my workload increase as Mondays I'm working as 3 people, and it's just draining me. No chance of a raise either as I've had multiple days off in the past month due to needing another rest day after working some 6 day shifts two weekends in a row.

Thanks in advance.
