Your thoughts on non-at will contractual employment?

How would you feel about a reciprocal contract with an employer that requires both sides to give a notice period to end employment. I'm likely to have my first employee soon, in trucking, and having an employee leave without notice could be very expensive, like anagram from ba few hundred to hundreds thousands, maybe even millions of dollars expensive. Under NORMAL circumstances: -The employee would be required to give 2 weeks notice, or have their remaining pay docked such that their last 2 weeks worked would be at minimum wage. Alternatively to docked pay, there could be any established payment the employee must give to the employer that could be enforced in court. -The employer would be required to similarly give 2 weeks notice of termination, and so long as the employee remains available they told be garunteed at least 2 weeks of pay. -If the employee gives notice, the…

Under NORMAL circumstances:
-The employee would be required to give 2 weeks notice, or have their remaining pay docked such that their last 2 weeks worked would be at minimum wage. Alternatively to docked pay, there could be any established payment the employee must give to the employer that could be enforced in court.
-The employer would be required to similarly give 2 weeks notice of termination, and so long as the employee remains available they told be garunteed at least 2 weeks of pay.
-If the employee gives notice, the employer could let them go sooner, but would be beholden to pay the equivalent wages for the remainder of the 2 week period.
-After 6 months of enjoyment the employee would be entitled to the equivalent an additional week or pay after their last day worked, regardless of who initiated, as long as the notice requirements are honored.

Exceptions and cut-outs could include.
-Emergencies like medical, military service, and safety of the employee would exempt both sides from the contract.
-Serious fireable offenses, like theft, violence, and inappropriate substance use would nullify the contract
— To clarify, while I don't personally care about substance use in your off hours, trucking is federally regulated, and the feds issue random drug screenings. If an employee fails, they lose their license immediately, and I can't give them work. Likewise, a truck is a vehicle, any open alcohol container in the truck could immediately take them off the road.
-Failure to reasonably maintain licenses/certificationsc required by the job would nullify the contract.

The exact time frames could be changed, and this isn't the end all be all of it, but in general, what are your thoughts?

If anybody knows enough to answer, in the US, what are the legalities of such an contract.
