Interviews are getting out of control

Rant incoming, sorry in advance. I'm a tech worker that got laid off back in April. Been struggling to find work since. I've had plenty of interviews at this point, I feel like I have it down to a science, but the part that's bothered me the most took place today. Due to the lack of work and UI getting close to drying up, I dropped an application to work at the gas station chain down the block to have a job to hold me over till I find my next position. Since then, I have interviewed with a Store Manager, had another interview with a District Manager, and they're scheduling a third interview with two other managers. When did a retail gig at a gas station become a 3+ interview process? It happens in my field of work, and I kind of ignored it, thinking it had something to…

I've had plenty of interviews at this point, I feel like I have it down to a science, but the part that's bothered me the most took place today.

When did a retail gig at a gas station become a 3+ interview process? It happens in my field of work, and I kind of ignored it, thinking it had something to do with “we want to make sure you're the right fit, blah blah blah”, but knowing that this happens for service positions now? What changed? Why are companies moving in this direction? What crucial piece of information are they missing from the first interview?
