Employer won’t pay my overtime – HELP!

Hello, my employer is refusing to pay me my legally-owed overtime and I don’t know what to do. I work at a music venue in Texas and have multiple roles: server, bartender, and office assistant. Over the past few months, I’ve been scheduled like crazy, often working between 50 and 60 hours a week. I noticed I wasn’t receiving any overtime and brought it up to my boss, and the solution he suggested was to limit my payroll hours to 80 per period (2 weeks) and put the remainder on a hand-cut check, plus my overtime wages (50% x highest hourly wage x hours over 80 per period). Recently, they’ve stopped paying me that overtime and have instead been going into our POS system and deleting my serving shifts (AFTER I’VE WORKED THEM) to bring my logged hours to under 80 per period. Their justification being, “Well, you’re only missing out on the server wage ($2.13/hour), so it’s not a huge deal.”

These guys are assholes—pieces of shit—and I KNOW they know exactly what they’re doing to me.

What should I do? I’ve already begun searching for other jobs, but I am still reliant on this one for income. Any and all advise is greatly appreciated!
